This 12-inch flat-bottom wok is an excellent example of the Contemporary Nonstick line’s versatility as it cooks classic Chinese stir-fry dishes, such as Hunan Lamb, and is equally as useful for cooking soups or pan-frying fish up the sides. The pan’s exterior is made of hard-anodized aluminum for superior heat distribution. The interior is coated with a nonstick surface that is resistant to peeling, chipping, flaking, or cracking. This pan has one long ergonomic brushed stainless-steel handle and one loop handle--both of which stay cool to the touch on the stovetop and are riveted to the wok for durability. Calphalon Contemporary Nonstick 12-inch flat-bottom wok is the perfect stir fry pan. Heavy gauge 98.7% pure aluminum gives great conductivity, while the advanced 2-ply nonstick surface allows for low/no fat cooking. Unique tulip shaped design looks great and cleans up like a breeze. Safe with nylon or wood utensils--a Calphalon nylon stir fry scoop does a wonderful job. Use medium to medium-high heat for best results when stir frying- high heat really isn't needed because the aluminum conducts and retains heat so well. Flat bottom works wonderfully on flat surfaced cook tops (glass, ceramic). Lifetime warranty.
